I am always looking for healthy slow cooker dinners to cook for my family. I found this recipe in one of my favorite cookbooks: Fix-It and Forget-It Lightly Revised & Updated: 600 Healthy, Low-Fat Recipes For Your Slow Cooker (Fix-It and Enjoy-It!).
This slow cooker chicken is part of our regular dinner rotation every month. It’s easy and delicious and everyone likes it.
Southwest Slow Cooker Chicken
4 to 6 boneless, skinless chicken breast halves
2 cans (15.5 ounces) corn, drained
1 can (15 ounces) black beans, rinsed and drained
1 jar (16 ounces) chunky salsa, divided
Mrs. Dash Original Blend seasoning
1 cup shredded Mexican cheese blend
In a 5 to 6 quart slow cooker add the chicken and season with Mrs. Dash Original Blend seasoning or salt and pepper to taste and top with 1/2 cup salsa.
In bowl combine the corn, black beans and ½ cup salsa
Add on top of chicken in slow cooker.
Cover and cook on high for 3 to 4 hours or on low for 7 to 8 hours.
Sprinkle with shredded Mexican cheese blend. Cover and cook 5 minutes more or until cheese melts.
