My favorite part of summer is peaches! I love fresh peaches and eagerly anticipate peach season every year. My family enjoys fresh peaches by themselves but they are also delicious served up in a warm delicious peach cobbler. Peach cobbler is a big hit at my house. It disappears quickly.
Southern Peach Cobbler
4 cups peeled, sliced peaches
2 cups sugar, divided
1/2 cup water
8 tablespoons butter
1 1/2 cups self-rising flour
1 1/2 cups milk
Preheat oven to 350 degrees F.
In saucepan combine the peaches, 1 cup sugar, and water and mix well.
Bring to a boil and let simmer for 10 minutes. Remove from the heat.
Place the butter in a 3-quart baking dish and put in oven to melt.
Slowly mix the remaining cup of sugar, flour, and milk to prevent clumping.
Pour the mixture over melted butter. DO NOT STIR.
Spoon the peaches on top, gently pouring in syrup.
The batter will rise to top while baking.
Bake for 30 to 45 minutes.
Serve with your choice of whipped cream or vanilla ice cream.
